Banana Almond Bread with Graham Filling


That's sort of a pathetic name for this bread, I know. But I really didn't know how to describe it, other than telling you exactly what's in it. I was craving banana bread Sunday morning, along with graham crackers and chocolate. And I didn't have vanilla, so I substituted almond extract, which turned out to be an AMAZING decision. So good. I used this recipe, but made several revisions. I didn't add the chocolate chips into the batter (they go in the filling), and I subbed almond extract for vanilla. I made a filling of 1/2 cup brown sugar, 5 finely crushed graham crackers, and 2 tablespoons of melted butter. I poured half the bread batter into the greased bread pan, followed by the filling, then a layer of chocolate chips, then the rest of the batter. Bake at 350 for about 50 minutes, until a toothpick comes out clean. Sorry if these instructions are hard to follow...I am watching Top Chef and thinking about how I would be cut in the first round for making something like this.
