BBQ Baked Beans (in an onion)

Well, these things sure are fun. BBQ baked beans in a grilled onion bowl. Not only are the beans to die for, but the onion bowl makes this just downright cute.

Recipe
  • 1 28 oz can baked beans (or 2 of the smaller cans)
  • 1/2 cup of your favorite barbecue sauce (recommended: KC Masterpiece)
  • 1/3 cup brown sugar
  • 4 large sweet onions
Prepare your grill for indirect heat (i.e., turn on one side of the grill - you don't want to grill these directly over the heat).

Next, cut the ends off of the onions and peel. Hollow them out, without poking a hole in the bottom. I have no tips on the strategy here...I am sure there is some sort of special cooks' tool that will do this for you, but all I had was a knife.  You can do it.
In a bowl, mix together the beans, BBQ sauce, and brown sugar. Sprinkle in plenty of black pepper.
Pour the beans into each of the onions. You can wrap the onions in foil, or leave them unwrapped if you want more of a char-grilled flavor. Place over indirect heat and cook for about an hour. For the last 5 minutes or so, I recommend moving them to direct heat to char the onion.

For the onion rings that you removed during the hollowing process, I recommend caramelizing them and putting them on a burger. Then, I recommend eating the burger with a side of BBQ beans in an onion bowl and french fries and watermelon feta salad. 

And there you have it, another Sunday night dinner at the Braley household.
