Grilled Asparagus with Tomato and Egg

I know,  I could be a little more creative with the name here. But it has been a long day and I couldn't think of anything. This is an easy side dish that consists of asparagus, tomato and, well, egg.



Toss one bunch asparagus and one box cherub tomatoes with 1-2 T. olive oil, sea salt, and cracked pepper. Place asparagus on a medium grill until just tender, about 7 minutes. Place the tomatoes on the grill for 2-3 minutes. Arrange asparagus and tomatoes on serving plates along with 1/2 hard boiled egg and shaved manchego (or another cheese of choice. Feta would be good). Drizzle with balsamic and serve.
