Creamy Goat Cheese Polenta

Polenta, who knew? Not me. Verrry delicious, verrry easy.

This is the only picture I have, because I was so excited to eat that I forgot to grab my camera . I served this Braised Short Rib Stew over the polenta, and it was like a match made in heaven. Recipe from the Pioneer Woman here. Great change up from mashed potatoes.
